Apple Muffins

Apple Muffins

Delicious and quick to make and are useful to have stashed in the freezer. They are quite low in calories too given the recipe calls for vanilla skyr.

Great from the freezer – just wrap well.

Cook Time: 20-30

Ingredients

  • 250g peeled and diced Granny Smith apples
  • 250g vanilla skyr
  • 2 tbsp lemon juice
  • 120g caster sugar
  • Couple drops of Vanilla extract
  • 1 egg
  • 250g flour
  • 1/2 tsp bicarb of soda
  • 2 tsp baking powder
  • 80ml vegetable oil

Instructions

  1. Preheat oven to 180 degrees on fan.
  2. Peel and dice apples and cover with lemon juice so they don’t brown.
  3. In a bowl add the flour, bicarb, baking powder
  4. In another bowl, mix the egg, sugar, skyr, vanilla and oil.
  5. Add the wet ingredients to flour mix and add the apples.
  6. Add mix into muffins cases and bake in centre of oven for 20 to 30 minutes or until they are golden.
  7. Leave to cool on a wire tray then enjoy.
