Comforting Beef Casserole

I love super simple tasty recipes – especially when they are in the one dish and I don’t have to worry about them until they are done. This recipe was well received in our house and is delicious with some creamy mash and green veg.

Serves: 4-6
Prep Time: 10-15 mins
Cook Time: 1 1/2 hours

Ingredients

  • 2 onions chopped
  • 1 clove garlic chopped
  • 600g diced beef
  • 2 tbsp olive oil
  • 1 tbsp soft brown sugar
  • 1 tbsp plain flour
  • 300ml beef stock
  • 200ml stout
  • Salt and pepper
  • 1 tsp dried thyme
  • Pinch ground cloves
  • 1 tbsp wholegrain mustard
  • 1 tap balsamic glaze
  • 3 large carrots chopped into large chunks

Instructions

  1. Preheat oven to 180 deg C.
  2. In a casserole dish, add 1 tbsp oil and brown the meat in small batches and remove.
  3. Add remaining oil to pan and sauté onions for two minutes then add garlic cooking for another minute. Don’t let the garlic burn.
  4. Add flour, sugar, stock, stout, mustard, ground cloves, thyme, some salt and lots of black pepper and bring to the boil. Add the meat back in along with the carrots.
  5. Cook for 1.5 hours before serving with your favourite side.
