I made these little cakes today and they were really delicious, not too sweet ! they also freeze well and are a good way to use up bananas that are near the end of their days.
- 125g self raising flour
- 125g butter, softened
- 2 eggs beaten (room temp)
- 2 tbsp runny honey
- 1 banana, mashed
- 1 tsp cinnamon
- Preheat oven to 180 deg C, then line a bun tin with paper cases.
- Spoon mixture into prepared cases and bake for 15-20 minutes until well risen and golden. If making mini size, adjust cook time accordingly.
- Remove from oven and transfer to a wire rack. Heat some honey until runny and brush over top of cupcakes while still warm. Can be frozen once cooled.
